One of my biggest eating struggles is LUNCH. Finding
healthy lunch options aren't always easy. It shouldn't be difficult, but sometimes I end up skipping it all together because
I don't have time,
I don't have anything readily available to eat,
or what I do have to eat doesn't look 'good'.
I then decided to start REMIXing my food!
Remixing has revolutionized the fashion blogger world, and its working great for them.
(check out my favorite fashion blogger Kendi.)
So why not do it with food??
Just take 8 ingredients (a sample is pictured below) and create 8 HEALTHY combo meals that can become lunch, or dinner.
FIRST
At the begging of the week I take all 8 ingredients and prepare them separately and place them in pyrex containers in the fridge. Some of the ingredients like tomatoes, avocado, and spinach I leave raw and prepare quickly the day of.
SECOND
I get excited about remixing my food! Just because it's the same 8 ingredients everyday, doesn't mean that I have to eat the same thing each meal. GET CREATIVE, pair things together that you typically wouldn't see in a normal restaurant. Don't forget to include a protein in each meal!

THIRD
It's time to EAT. I often include fruits, extra veggies
if I have them, and a large glass of ice water.
Remember there are no rules, this is just a simple idea to help create healthy combinations of foods.

Here is a sample week:
meal 1: ((spinach salad))
chicken, spinach, tomato , avocado
meal 2: ((burrito bowl))
brown rice, black beans, chicken, spinach, tomato, avocado
meal 3: ((scramble))
scrambled eggs, black beans, avocado
meal 4: ((skillet))
brown rice, chicken,black beans, zuchinni, tomato
meal 5: ((zuchinni boats))
zucchini, black beans, tomatoes
meal 6: ((egg salad))
boiled egg, avocado black bean
meal 7: ((mix up))
put all 8 ingredients together
meal 8: ((simple chicken))
chicken, brown rice, sauteed spinach
